Kaz has a very old school approach to wine making, no chemicals. Our wines are made the old fashioned way - from grapes cared for with all natural sprays to growing vegetables between the vine rows. The grapes are harvested at lower sugar levels and higher acids, then we cool ferment in open top macro bins for up to 21 days, grabbing all the acid or vitamin C/ascorbic acid from the skins.
